All our meats are cooked low & slow with hickory logs on the premises. This process results in the "smoke ring," a pink ring around the meat with a pinkish tint throughout. This is a normal characteristic in this type of cooking. Pork bbq & brisket smoked 12 hours * chicken, turkey & hams smoked 3 hours * St Louis ribs smoked 6 hours
